Crispy Beef Stir Fry

Ingredients
1 tablespoon each rice wine vinegar, peanut oil, soy sauce
2 tablespoon cornstarch
1 pound sirloin, cut into 1/2 inch slices
1 cup snow peas
1/4 cup soy sauce
1/4 cup sweet chili sauce
1/4 cup hoisin sauce
1 orange, juiced
1 tablespoon rice wine vinegar
1 tablespoon honey
2 tablespoons peanut oil
2 cloves garlic, minced
2 green onions, minced
Directions
  1. In a bowl combine the marinade ingredients.
  2. Stir in the beef and refrigerate for 20 to 30 minutes.
  3. Bring a large pot of water to a boil. Cook the snow peas for 3 to 4 minutes and set aside.
  4. In another bowl combine the ingredients for the sauce and set aside. Over high heat, in a wok or skillet, bring the peanut oil to almost smoking temperature.
  5. Add the beef and stir-fry until crispy and cooked to medium doneness for about two minutes. 
  6. Add the garlic, onions and snow peas and stir to combine.
  7. Add the sauce and bring to a simmer.
  8. Let the sauce reduce and thicken slightly for about a minute.  Serve over ice. Serves four.
